milk that's just about to "turn" can be restored to freshness by adding a pinch of bicarbonate of soda (baking soda) to it. if it's too fa gone, however, remember that sour milk can be wonderful when used for baking light scones and cakes. if, on the other hand, a recipe calls for sour milk and you don't have any, simply add a little lemon juice, or even vinegar, to milk to sour it.
oh i've done this a lot of times when baking banana bread- the adding of vinegar to the milk to make it sour. 1 T of vinegar + 2 T whole milk = sour milk
